Brazilian Cheese Bread (Pão de Queijo)

This recipe is naturally gluten-free due to the use of yuca (or cassava) flours.

Ingredients

  • 250g Tapioca Flour
  • 250g Sour Manioc Flour (or use all tapioca)
  • 350g Parmesan (thick shredded)
  • 1/2 tbl Salt
  • 1/2 cup Water
  • 1/2 cup Milk
  • 1/2 cup Oil
  • 4 Eggs

Steps

  1. Mix flour and salt in a bowl
  2. Bring water, milk, oil to a boil
  3. Slowly pour liquid over flour and combine with a spoon
  4. Wait for flour mixture to become cool to the touch
  5. Add eggs and kneed into dough (should be sticky!)
  6. Add cheese and combine
  7. Put a little oil on your hands and roll dough into balls (they should retain their stickiness)
  8. Place balls on aluminum foil on baking sheet and bake at 360 degrees on the bottom rack for ~25 mins

Notes

You can save this recipe to bake later by placing the dough balls on a baking sheet or plate and putting them in the freezer. Once they are frozen you can transfer them to a ziploc bag. Baking time is the same for fresh or frozen dough.
