This recipe is naturally gluten-free due to the use of yuca (or cassava) flours.
Ingredients
- 250g Tapioca Flour
- 250g Sour Manioc Flour (or use all tapioca)
- 350g Parmesan (thick shredded)
- 1/2 tbl Salt
- 1/2 cup Water
- 1/2 cup Milk
- 1/2 cup Oil
- 4 Eggs
Steps
- Mix flour and salt in a bowl
- Bring water, milk, oil to a boil
- Slowly pour liquid over flour and combine with a spoon
- Wait for flour mixture to become cool to the touch
- Add eggs and kneed into dough (should be sticky!)
- Add cheese and combine
- Put a little oil on your hands and roll dough into balls (they should retain their stickiness)
- Place balls on aluminum foil on baking sheet and bake at 360 degrees on the bottom rack for ~25 mins
Notes
You can save this recipe to bake later by placing the dough balls on a baking sheet or plate and putting them in the freezer. Once they are frozen you can transfer them to a ziploc bag. Baking time is the same for fresh or frozen dough.
